bite me cupcakes at swingers: santa monica



if you are from the east coast like we are, nothing say late night fun like heading to the local diner at the end of the night. however, outside of the tri-state, your standard diner if few and far between. swingers in santa monica is the closest thing to a diner the santa monica has to offer. the menu is a mix of typical diner food and vegan options for those health conscious west coasters. though i would say the food is not quite as "diner-y" as i would like it to be at 1am, i do enjoy the fact that i can get a cupcake at all hours of the night! there are usually about 10 standard cupcakes to choose from and a weekly special! i have had two bite me cupcakes so far, the s'mores and of course the red velvet, here's what i think.

over all i really like this cupcake, the cake and the icing taste great, the only reason the icing got a 3 out of 5 is because there is not nearly enough of it, these are pretty large cupcakes and they only put a little dollop on top.

Homemade Hostess Cupcakes


The Hostess cupcake. Born in 1919, this tasty treat has become an American icon. That chocolate cake with that delicious cream filling topped with thick chocolate frosting won over the hearts of millions of kids and adults everywhere. While we all love this infamous cupcake, we know that homemade is almost always better than store bought. When I found this recipe I was excited to try it to see if it would taste like the original, but the result was soooooo much better. With more sophisticated ingredients (high quality chocolate, pure vanilla extract, etc.) comes a grown up spin on the childhood favorite. I baked these cupcakes for a very special event recently- and let me just say they were a hit!! If you are looking for a little nostalgia, and a lot of delicious-ness, I strongly suggest you give these a try.


Here is the recipe, very slightly adapted from this recipe from Bake at 350:

Cupcakes:
1 & 1/4 cups unbleached, all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon coarse salt
1 & 1/4 cups granulated sugar
4 ounces unsweetened chocolate, chopped
1 stick unsalted butter, cut into pieces
2 teaspoons pure vanilla extract
2 large eggs, lightly beaten

Filling:
4 tablespoons unsalted butter, at room temperature
1 cup powdered sugar
2 teaspoons pure vanilla exrtact
3 tablespoons heavy cream
1 cup marshmallow creme
Ganache:
3 ounces bittersweet chocolate, chopped
3 ounces semisweet chocolate, chopped
1/2 cup heavy cream
1 tablespoon unsalted butter
2 teaspoons pure vanilla extract
Cupcakes:
1. Preheat oven to 350 and place liners in your pan, the recipe makes around 20 cupcakes.
2. Bring the sugar and 1 cup water to a boil in a saucepan, stirring until the sugar dissolves, about 3 minutes.
3. Pour into a large bowl; add the chocolate and butter and let sit, stirring occasionally, until the chocolate is melted and the mixture has cooled slightly.
4. Stir in the vanilla.
5. Sift together the flour, baking soda, baking powder and salt in a bowl.
6. Using a mixer, beat the eggs into the chocolate, then mix in the dry ingredients.
7. Divide batter evenly into the pan (about 1/4 cup per cupcake) and bake for about 20 minutes.
Filling:
1. Using a mixer, cream the butter until light and fluffy.
2. Beat in 1/2 cup confectioners’ sugar.
3. Add the vanilla and 1 tablespoon heavy cream; beat until smooth.
4. Beat in the remaining 1/2 cup confectioners’ sugar and 2 tablespoons heavy cream in batches, alternating after each addition.
5. Beat in the marshmallow creme; set aside or refrigerate.
Ganache:
1.Place the chocolate in a stainless-steel bowl. Heat the cream and 1 tablespoon butter until just boiling, then pour over the chocolate.
2. Let stand for 5 minutes.
3. Whisk until smooth.
4. Add in vanilla.
5. Let it sit until cool and glossy.

This cake had great texture, a little bit crumbly but that's part of the fun in cupcakes!

Frosting: 5 out of 5
You really can not go wrong with a chocolate ganache.

Taste: 5 out of 5
First off, I have very harsh cupcake critics in my life, myself being the biggest one. I can honestly say every person that tried this cupcake loved it!!

Bottom Line:
A vintage cupcake done right.

oreo cookie cupcakes with vanilla oreo buttercream


one of our favorite things to get at the jersey shore is fried oreos. so we thought if you can fry an oreo why not bake one in a cupcake! below is a recipe for oreo bottom cupcakes with vanilla and oreo butter cream! yum!

ingredients:
recipe should yield 12 cupcakes

cupcakes:
1/2 cup unsalted butter room temperature
3/4 cup confectioners sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup cold milk
12 oreo cookies

icing:
2 1/2 sticks unsalted butter room temperature
2 cups confectioners sugar
1 tablespoon pure vanilla extract
1- 2 tablespoons milk
6 oreo cookies

directions:

cupcakes:
1. preheat oven to 350 degrees
2. place half an oreo icing side up in the bottom of 12 cupcake liners and set aside
3. take the other half of the oreos in a large ziplock bag and crush by rolling over with a rolling pin, set the crumbs aside
4. cream butter and sugar, add eggs one at a time beating after each addition
5. add vanilla to butter mixture
6. in a separate bowl stir together all dry ingredients
7. add to butter mixture and stir in milk
8. take the cookie crumbs and fold into batter until well blended
9. bake for 18- 24 minutes

icing:
1. in a large bowl using a mixer beat the butter on medium speed until creamy (about 1 minute)
2. add confectioners sugar 1 cup (to taste) at a time beating until smooth after each addition
3. add vanilla and 1 tablespoon of milk, beat at high speed until fluffy
4. add additional tablespoon of milk if necessary
5. frost

the oreo at the bottom is amazing, the cake could have been a little fluffier

icing: 3.5 out of 5
love the oreo crumbles, i made it a little too sweet though

taste: 4 out of 5
overall really yummy! the oreo bottom with the oreo cake is an awesome combo!

bottom line:
this cupcake is the best of both worlds! it will satisfy your craving for cookies and cupcakes all at once!

cupcake flavored pancakes...yum!


that's right at the griddle cafe in hollywood you can get just that! they have flavors like "mounds of pleasure" a chocolate and coconut pancake topped with whipped cream, "a time to love" a strusel, butterscotch and carmel pancake topped with whipped cream and caramel, "black magic" and oreo pancake with pieces of oreo cookies and whipped cream and of course the "red velvet" topped with real cream cheese frosting! yum! the pancakes are giant, so i recommend ordering just one (i had one and took 3/4 of it home) also if you go on the weekend, expect to wait, but it will totally be worth it! enjoy!

sprinkles cupcakes: beverly hills


sprinkles cupcakes is by far one of the most popular cupcake bakeries in la. no matter when i have gone to the beverly hills location there is always a line! and for good reason, the frosting is amazing (so good they even sell frosting shots)! those of you that do not have a sprinkles in your area may have seen the owner and creator of sprinkles candace nelson as a judge on food network's cupcake wars. on my last trip to sprinkles i got a 4 yummy cupcakes red velvet, black and white, chocolate marshmallow and strawberry here's what i thought!
